A zesty and healthy pasta salad inspired by street corn flavors, perfect for light cravings.
Ingredients

- 8 oz pasta (penne or fusilli)
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix corn, red onion, cilantro, and feta cheese.
- In a small bowl, whisk Greek yogurt, lime juice, olive oil, chili powder, smoked paprika, salt, and pepper.
- Combine pasta with the corn mixture.
- Pour the dressing over the salad and toss well.
- Chill for 30 minutes before serving.
Notes
- Use fresh corn for a sweeter taste.
- Add avocado for extra creaminess.
- Adjust chili powder for more or less heat.
