Ingredients

- 8 oz pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp lemon zest
Instructions
- Cook the pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine cherry tomatoes, mozzarella, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, and pepper.
- Add the cooled pasta to the large bowl with the tomatoes and mozzarella.
- Pour the dressing over the pasta and toss gently to combine.
- Sprinkle lemon zest on top before serving.
Notes
- For a stronger flavor, let the salad sit in the fridge for 30 minutes before serving.
- Add grilled chicken or shrimp for extra protein.
