Description
A quick and healthy quinoa stir fry packed with fresh vegetables.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp ginger, grated
Instructions
- Rinse quinoa and cook in water for 15 minutes.
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 30 seconds.
- Add vegetables and stir-fry for 5 minutes.
- Mix in cooked quinoa and soy sauce.
- Cook for another 2 minutes, then serve.
Notes
- Use tamari for a gluten-free option.
- Add tofu or chicken for extra protein.
