Ingredients

- 1 cup cooked chicken, shredded
- 1/4 cup Greek yogurt
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup red onion, finely diced
- 1/4 cup celery, finely diced
- 1 large cucumber, thinly sliced lengthwise
- 1 tbsp fresh dill, chopped (optional)
Instructions
- In a bowl, mix shredded chicken, Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper.
- Add red onion, celery, and dill (if using) to the chicken mixture. Stir well.
- Lay cucumber slices flat on a clean surface.
- Spoon a small amount of chicken salad onto each cucumber slice.
- Roll up the cucumber slices tightly and secure with a toothpick if needed.
- Serve immediately or chill in the fridge for up to 2 hours before serving.
Notes
- Use seedless cucumbers for easier slicing.
- Adjust seasoning to taste.
- For a creamier texture, add more yogurt.
