Ingredients

- 2 cups dried black-eyed peas
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Salt to taste
Instructions
- Rinse black-eyed peas and soak overnight.
- Heat olive oil in a pot over medium heat.
- Sauté onion, garlic, and bell pepper for 5 minutes.
- Add tomatoes and cook for 3 minutes.
- Drain peas and add to the pot.
- Pour in vegetable broth and stir in spices.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and serve hot.
