- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons rum
- 24 ladyfingers
- 1 tablespoon cocoa powder
Instructions
- Beat egg yolks and sugar until thick and pale.
- Heat milk in a saucepan, then gradually whisk into the egg mixture.
- Return mixture to saucepan and cook over low heat, stirring constantly, until thickened.
- Remove from heat, cool slightly, then stir in mascarpone until smooth.
- Whip heavy cream and vanilla until stiff peaks form.
- Fold whipped cream into mascarpone mixture.
- Combine coffee and rum in a shallow dish.
- Quickly dip ladyfingers into coffee mixture and layer in a dish.
- Spread half the mascarpone mixture over the ladyfingers.
- Repeat layers, then dust with cocoa powder.
- Refrigerate for at least 4 hours before serving.
