Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple (drained)
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix flour, sugar, cinnamon, nutmeg, cloves, baking soda, and salt.
- Add eggs, oil, and vanilla extract. Stir until combined.
- Fold in grated carrots, pineapple, and walnuts.
- Pour batter into the prepared pan. Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- You can substitute walnuts with pecans.
- Store in an airtight container for up to 3 days.
- Serve with cream cheese frosting if desired.
