  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, mix flour, sugar, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. Add eggs, oil, and vanilla extract. Stir until combined.
  4. Fold in grated carrots, pineapple, and walnuts.
  5. Pour batter into the prepared pan. Bake for 35-40 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
