- 1 whole chicken (4–5 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lemon, halved
- 4 garlic cloves, peeled
- 1 onion, quartered
Instructions
- Preheat oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil.
- Season inside and out with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- Stuff the cavity with lemon halves, garlic, and onion.
- Place the chicken on a roasting pan, breast-side up.
- Roast for 1 hour 15 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.

- Use a meat thermometer to check doneness.
- For extra crispiness, pat the skin dry thoroughly before seasoning.
