- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed butternut squash with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper.
- Spread the squash evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
- Garnish with fresh parsley before serving.

- For extra flavor, add a pinch of cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
