  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse quinoa under cold water.
  2. Heat olive oil in a pan and sauté bell pepper and zucchini for 5 minutes.
  3. Add quinoa, vegetable broth, garlic powder, salt, and black pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes.
  5. Remove from heat and let sit for 5 minutes.
  6. Fluff with a fork and garnish with fresh parsley.
