- 1 cup quinoa
- 2 cups vegetable broth

- 1 bell pepper, diced
- 1 zucchini, sliced

- 1/4 cup fresh parsley, chopped
Instructions
- Rinse quinoa under cold water.
- Heat olive oil in a pan and sauté bell pepper and zucchini for 5 minutes.
- Add quinoa, vegetable broth, garlic powder, salt, and black pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff with a fork and garnish with fresh parsley.
Notes
- For extra flavor, add a squeeze of lemon.
- Store leftovers in an airtight container for up to 3 days.
