Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Rinse quinoa under cold water and drain.
- In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Remove from heat and let sit for 5 minutes. Fluff with a fork and let cool.
- In a large bowl, combine cooled quinoa, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour dressing over the salad and toss gently.
- Sprinkle feta cheese on top if desired.
- Serve chilled or at room temperature.
Notes
- For extra flavor, add a pinch of dried oregano or basil.
- Replace feta with avocado for a vegan option.
- Store leftovers in an airtight container for up to 3 days.
