Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let sit for 5 minutes. Fluff with a fork and let cool.
  4. In a large bowl, combine cooled quinoa, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. Pour dressing over the salad and toss gently.
  7. Sprinkle feta cheese on top if desired.
  8. Serve chilled or at room temperature.

Notes

  • For extra flavor, add a pinch of dried oregano or basil.
  • Replace feta with avocado for a vegan option.
