  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas and soak them overnight in water.
  2. Drain and rinse the peas before cooking.
  3. Heat olive oil in a large pot over medium heat.
  4. Sauté onion, garlic, and red bell pepper until softened.
  5. Add tomatoes, paprika, cumin, salt, pepper, and bay leaf.
  6. Stir in the black-eyed peas and water.
  7. Bring to a boil, then reduce heat and simmer for 45-50 minutes until peas are tender.
  8. Remove the bay leaf before serving.
