Ingredients

- 2 cups dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak them overnight in water.
- Drain and rinse the peas before cooking.
- Heat olive oil in a large pot over medium heat.
- Sauté onion, garlic, and red bell pepper until softened.
- Add tomatoes, paprika, cumin, salt, pepper, and bay leaf.
- Stir in the black-eyed peas and water.
- Bring to a boil, then reduce heat and simmer for 45-50 minutes until peas are tender.
- Remove the bay leaf before serving.
Notes
- Soaking the peas overnight reduces cooking time.
- Adjust spices to your taste.
- Serve with rice or bread.
