- 2 cans (15 oz each) black-eyed peas, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup vegetable broth
- 1 bay leaf
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and cook until soft, about 3 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Add drained black-eyed peas, smoked paprika, salt, black pepper, and cayenne (if using). Mix well.
- Pour in vegetable broth and add the bay leaf.
- Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Remove the bay leaf and serve hot.
Notes
- For a richer flavor, add diced bacon or ham while cooking the onions.
- Adjust spice levels to your preference.
- Serve with cornbread or rice for a complete meal.
