  • 1 smoked ham hock or 4 slices bacon

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Rinse the black-eyed peas and remove any debris.
  2. In a large pot, combine peas, water, ham hock (or bacon), onion, garlic, salt, and black pepper.
  3. Bring to a boil, then reduce heat to low.
  4. Simmer uncovered for 1.5 to 2 hours, stirring occasionally, until peas are tender.
  5. Remove ham hock, shred meat, and return to pot (if using bacon, crumble and stir in).
