- 1 pound dried black-eyed peas, rinsed and sorted
- 6 cups water or vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 1 smoked ham hock or 1 cup diced ham
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 bay leaf
Instructions
- Rinse black-eyed peas under cold water and remove any debris.
- Place all ingredients in the crock pot.
- Cook on high for 4-5 hours or low for 7-8 hours until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Discard the bay leaf before serving.
Notes
- Soak the peas overnight for faster cooking.
- Add more liquid if needed during cooking.
- Serve with cornbread or rice.
