  • 2 celery stalks, diced
  • 1 smoked ham hock or 1 cup diced ham
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 bay leaf

Instructions

  1. Rinse black-eyed peas under cold water and remove any debris.
  2. Place all ingredients in the crock pot.
  3. Cook on high for 4-5 hours or low for 7-8 hours until peas are tender.
  4. Remove the ham hock, shred the meat, and return it to the pot.
  5. Discard the bay leaf before serving.

Notes

  • Soak the peas overnight for faster cooking.
