  • 4 cups water
  • 1 bunch collard greens, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 smoked ham hock or turkey leg
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Rinse black-eyed peas and soak overnight in water.
  2. Drain peas and add to a pot with 4 cups water. Bring to a boil.
  3. Reduce heat, add ham hock or turkey leg, and simmer for 30 minutes.
  4. In a skillet, heat olive oil and sauté onion and garlic until soft.
  5. Add collard greens and cook until wilted.
  6. Combine greens with peas and season with salt, black pepper, and red pepper flakes.
  7. Simmer for another 20 minutes until flavors meld.
  8. Remove ham hock or turkey leg, shred meat, and return to pot.
  9. Serve hot.

Notes

  • Soaking peas overnight reduces cooking time.
  • For a vegetarian version, omit the ham hock and use vegetable broth.
