- 1 cup dried black-eyed peas
- 4 cups water
- 1 bunch collard greens, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 smoked ham hock or turkey leg
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
Instructions
- Rinse black-eyed peas and soak overnight in water.
- Drain peas and add to a pot with 4 cups water. Bring to a boil.
- Reduce heat, add ham hock or turkey leg, and simmer for 30 minutes.
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- Add collard greens and cook until wilted.
- Combine greens with peas and season with salt, black pepper, and red pepper flakes.
- Simmer for another 20 minutes until flavors meld.
- Remove ham hock or turkey leg, shred meat, and return to pot.
- Serve hot.
Notes
- Soaking peas overnight reduces cooking time.
- For a vegetarian version, omit the ham hock and use vegetable broth.
- Adjust spice levels to taste.
