Ingredients

- 1 lb dried black-eyed peas, rinsed and sorted
- 6 cups water
- 1 smoked ham hock or 1/2 lb smoked turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- 2 bay leaves
Instructions
- Place black-eyed peas in a large pot and cover with water. Soak for 6-8 hours or overnight. Drain and rinse.
- Add 6 cups of fresh water to the pot with the peas.
- Add ham hock or smoked turkey, onion, garlic, bell pepper, salt, black pepper, cayenne pepper, and bay leaves.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, stirring occasionally.
- Remove ham hock or turkey, shred the meat, and return it to the pot.
- Cook for an additional 15 minutes, then remove bay leaves before serving.
Notes
- For a vegetarian version, omit the meat and use vegetable broth instead of water.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Serve with cornbread or rice for a complete meal.
