Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup melted butter
- 1 egg
- 2 tbsp honey
- 1/2 cup shredded cheddar cheese
- 4 slices smoked bacon, cooked and crumbled
- 2 jalapenos, finely chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Mix cornmeal, flour, baking powder, and salt in a bowl.
- In another bowl, whisk milk, melted butter, egg, and honey.
- Combine wet and dry ingredients. Fold in cheese, bacon, and jalapenos.
- Spoon batter into muffin tin, filling each cup 3/4 full.
- Bake for 18-20 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Remove jalapeno seeds for less heat.
- Use buttermilk for extra tang.
- Store leftovers in an airtight container.
