Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 2 tbsp honey
  • 1/2 cup shredded cheddar cheese
  • 4 slices smoked bacon, cooked and crumbled
  • 2 jalapenos, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Mix cornmeal, flour, baking powder, and salt in a bowl.
  3. In another bowl, whisk milk, melted butter, egg, and honey.
  4. Combine wet and dry ingredients. Fold in cheese, bacon, and jalapenos.
  5. Spoon batter into muffin tin, filling each cup 3/4 full.
  6. Bake for 18-20 minutes or until golden brown.
  7. Let cool slightly before serving.
