- 1/2 tsp salt
- 1 cup chicken or vegetable broth
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in paprika, cumin, black pepper, and salt.
- Add black-eyed peas and broth. Simmer for 10 minutes.
- Add shrimp and cook until pink, about 5 minutes.
- Garnish with fresh parsley before serving.
