- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 pita breads
- 1/2 cup Greek yogurt
- 2 tbsp ranch seasoning
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken with olive oil, garlic powder, paprika, oregano, salt, and pepper.
- Spread chicken on a sheet pan and bake for 20-25 minutes.
- Mix yogurt, ranch seasoning, dill, parsley, and lemon juice for the sauce.
- Warm pitas briefly in the oven or microwave.
- Slice chicken and stuff into pitas with the herby ranch sauce.
Notes
- Use chicken if preferred.
- Add sliced veggies to the pitas for extra crunch.
- Leftover chicken works for salads or wraps.
