- 4 medium potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp sour cream
- 1 cup mixed vegetables (carrots, asparagus, bell peppers)
- 1 tbsp balsamic glaze
Instructions
- Preheat oven to 400°F (200°C).
- Season steaks with salt and pepper.
- Heat olive oil in a pan over medium-high heat. Sear steaks for 3 minutes per side.
- Add butter, garlic, and rosemary to the pan. Baste steaks for 1 minute.
- Transfer steaks to the oven and cook for 5-7 minutes for medium-rare.
- Boil potatoes until tender. Drain and mash with milk and sour cream.
- Toss vegetables with olive oil, salt, and pepper. Roast for 15 minutes.
- Plate the steak, mashed potatoes, and vegetables. Drizzle with balsamic glaze.
