- 1 cup rice
- 1 cup black-eyed peas, soaked overnight
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Drain soaked black-eyed peas and add them to the pot.
- Stir in rice, salt, black pepper, and cumin.
- Pour in water, bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes until rice and peas are tender.
- Fluff with a fork and serve warm.
Notes
- Soaking black-eyed peas overnight reduces cooking time.
- Adjust seasoning to taste.
- For extra flavor, add a bay leaf while cooking.
