Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup pasta or rice
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Add pasta or rice and thyme. Simmer until pasta or rice is tender.
- Season with salt and pepper. Serve hot.

- Use leftover cooked rice or pasta for faster prep.
- Add beans or shredded chicken for extra protein.
