Ingredients

- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked rice
- 1/2 cup corn kernels
- 1/4 cup diced tomatoes
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add black beans, corn, and diced tomatoes. Stir.
- Sprinkle cumin, garlic powder, salt, and pepper. Mix well.
- Cook for 5 minutes, stirring occasionally.
- Serve over cooked rice.
Notes
- Use any type of beans you have.
- Add hot sauce for extra flavor.
- Top with cheese if desired.
