Ingredients

  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse quinoa under cold water.
  2. Bring water to a boil in a pot.
  3. Add quinoa, reduce heat, and simmer for 15 minutes.
  4. Heat olive oil in a pan over medium heat.
  5. Sauté vegetables and garlic for 5 minutes.
  6. Mix cooked quinoa with vegetables.
  7. Season with salt, pepper, and parsley.
  8. Serve warm.
