Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 cup chopped vegetables (bell peppers, carrots, zucchini)
- 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Rinse quinoa under cold water.
- Bring water to a boil in a pot.
- Add quinoa, reduce heat, and simmer for 15 minutes.
- Heat olive oil in a pan over medium heat.
- Sauté vegetables and garlic for 5 minutes.
- Mix cooked quinoa with vegetables.
- Season with salt, pepper, and parsley.
- Serve warm.
