Instructions
- Rinse the black-eyed peas under cold water.
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic, sauté until soft.
- Add black-eyed peas, vegetable broth, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove the bay leaf before serving.
