- 2 lbs pork shoulder, cubed
- 1 lb sauerkraut, drained
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp caraway seeds
- 1 tbsp vegetable oil
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add pork cubes and brown on all sides (about 5 minutes).
- Add onions and garlic, sauté until softened.
- Stir in sauerkraut and caraway seeds.
- Pour in chicken broth and season with salt and pepper.
- Cover and simmer for 1.5 hours, stirring occasionally.
- Serve hot with mashed potatoes or crusty bread.
Notes
- For extra flavor, add smoked sausage or bacon.
- Rinse sauerkraut if you prefer a milder taste.
- Leftovers taste even better the next day.
