- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 (3.4 oz) package instant pistachio pudding mix
- 1/2 cup chopped pistachios (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in eggs and vanilla.
- In a separate bowl, whisk flour, baking powder, salt, and pudding mix.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Fold in chopped pistachios if using.
- Spread dough evenly in prepared pan.
- Bake for 20-25 minutes or until edges are lightly golden.
- Cool completely before cutting into bars.
Notes
- Store in an airtight container at room temperature for up to 3 days.
- For extra flavor, add a few drops of green food coloring.
- You can substitute almond extract for vanilla extract.
