A hearty beef stew made in a crockpot with tender beef, vegetables, and rich broth.
Ingredients

- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet over medium heat.
- Transfer the beef to the crockpot.
- Add carrots, potatoes, onion, and garlic.
- Pour in beef broth and stir in tomato paste.
- Season with thyme, rosemary, salt, and pepper.
- Cook on low for 8 hours or high for 4 hours.
- Serve hot.
Notes
- For thicker stew, mix 1 tbsp cornstarch with water and stir in before serving.
- Add peas or mushrooms if desired.
