- 2 boneless, skinless chicken , cubed
- 1 cup fresh pineapple chunks
- 1 cup rice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Cook rice according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 30 seconds.
- Add chicken, cook until no longer pink.
- Stir in pineapple, soy sauce, honey, salt, and pepper.
- Cook for 3-4 minutes until pineapple is slightly softened.
- Serve over cooked rice.
