Ingredients

- 2 cups all-purpose flour
- 1 tsp salt
- 3/4 cup unsalted butter, chilled
- 4–6 tbsp ice water
- 4 cups pumpkin puree
- 1 cup brown sugar
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 3 large eggs
- 1 can evaporated milk
Instructions
- Mix flour and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add ice water, 1 tbsp at a time, until dough forms.
- Chill dough for 30 minutes.
- Roll out dough and fit into a pie dish.
- Mix pumpkin, sugar, spices, and salt in a bowl.
- Beat in eggs and evaporated milk until smooth.
- Pour filling into crust.
- Bake at 425°F for 15 minutes, then reduce to 350°F for 40-50 minutes.
- Cool before slicing.
Notes
- Chill dough for easier handling.
- Use a sharp knife for clean slices.
- Wipe the knife between cuts.
