- 1 cup dried black-eyed peas
- 4 cups water
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- Place them in a large bowl and cover with 4 cups of water. Soak overnight.
- Drain and rinse the peas the next day.
- In a pot, sauté onion and garlic until soft.
- Add the soaked peas, salt, pepper, paprika, and bay leaf.
- Cover with water and simmer for 45-60 minutes until tender.
- Remove the bay leaf before serving.
