A delicious make-ahead breakfast casserole with bananas, bread, and custard.
Ingredients

- 6 cups cubed French bread
- 3 ripe bananas, sliced
- 4 eggs
- 1 1/2 cups milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp brown sugar
Instructions
- Grease a 9×13 inch baking dish.
- Layer bread cubes and banana slices in the dish.
- Whisk eggs, milk, maple syrup, vanilla, cinnamon, and nutmeg in a bowl.
- Pour the egg mixture over the bread and bananas.
- Sprinkle brown sugar on top.
- Cover and refrigerate overnight.
- Bake at 350°F (175°C) for 45 minutes until golden.
- Serve warm with extra maple syrup.
Notes
- Use stale bread for better texture.
- Add nuts or chocolate chips for variation.
- Can be frozen before baking.
