- 4 boneless, skinless chicken
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 1/4 cup fresh basil, chopped
Instructions
- Mix balsamic vinegar, olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl.
- Add chicken to the marinade, coating evenly. Let sit for 10 minutes.
- Heat a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until browned.
- Add cherry tomatoes and red onion to the pan. Cook for another 3-4 minutes until vegetables soften.
- Pour remaining marinade over the chicken and simmer for 2 minutes.
- Garnish with fresh basil before serving.

- Marinate chicken longer for deeper flavor (up to 1 hour).
- Use fresh herbs if available for better taste.
