Ingredients

  • 1/4 cup balsamic vinegar

  • 2 cloves garlic, minced

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/4 cup fresh basil, chopped

Instructions

  1. Mix balsamic vinegar, olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl.
  2. Add chicken to the marinade, coating evenly. Let sit for 10 minutes.
  3. Heat a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until browned.
  4. Add cherry tomatoes and red onion to the pan. Cook for another 3-4 minutes until vegetables soften.
  5. Pour remaining marinade over the chicken and simmer for 2 minutes.
