Ingredients

  • 1 whole chicken (34 lbs)
  • 3 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp fresh lime juice
  • 1 tsp oregano

Instructions

  1. Mix soy sauce, vinegar, oil, garlic, cumin, paprika, pepper, salt, lime juice, and oregano in a bowl.
  2. Rub the marinade all over the chicken, inside and out.
  3. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat grill or oven to 375°F (190°C).
  5. Cook chicken for 50-60 minutes or until juices run clear.
  6. Let rest for 10 minutes before slicing.
