Ingredients

- 1 whole chicken (3–4 lbs)
- 3 tbsp soy sauce
- 2 tbsp white vinegar
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp fresh lime juice
- 1 tsp oregano
Instructions
- Mix soy sauce, vinegar, oil, garlic, cumin, paprika, pepper, salt, lime juice, and oregano in a bowl.
- Rub the marinade all over the chicken, inside and out.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill or oven to 375°F (190°C).
- Cook chicken for 50-60 minutes or until juices run clear.
- Let rest for 10 minutes before slicing.
Notes
- Marinate longer for deeper flavor.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Serve with green sauce (aji verde) for authenticity.
