- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup crushed cinnamon rolls (from a can or homemade)
- 2 tbsp melted butter
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 325°F (165°C). Line a muffin tin with cupcake liners.
- Mix crushed cinnamon rolls with melted butter, brown sugar, and cinnamon. Press into the bottom of each liner.
- Beat cream cheese and sugar until smooth. Add egg and vanilla, mixing until well combined.
- Pour cheesecake mixture over the cinnamon roll base in each liner.
- Bake for 18-20 minutes until set. Let cool before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- Top with cream cheese frosting for extra sweetness.
