Ingredients

- 1 lb lean steak (sirloin or flank)
- 1 tsp olive oil
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Pat the steak dry with a paper towel.
- Rub olive oil evenly on both sides of the steak.
- Mix black pepper, garlic powder, onion powder, and smoked paprika in a small bowl.
- Sprinkle the spice mix evenly over the steak.
- Press fresh rosemary and thyme onto both sides.
- Let the steak rest for 10 minutes at room temperature.
- Heat a grill or skillet over medium-high heat.
- Cook the steak for 4-5 minutes per side for medium-rare.
- Remove from heat and let rest for 5 minutes before slicing.
Notes
- Use a meat thermometer to check doneness (135°F for medium-rare).
- For extra flavor, add lemon zest before cooking.
- Slice against the grain for tender pieces.
