- 2 large potatoes, diced
- 1 tbsp olive oil

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup lettuce, shredded
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F.
- Toss diced potatoes with olive oil, salt, pepper, and paprika.
- Spread potatoes on a baking sheet and bake for 25 minutes until crispy.
- Brown ground beef in a skillet and add taco seasoning.
- Assemble bowls with potatoes, beef, cheese, lettuce, sour cream, salsa, and cilantro.
