- 1/4 cup cornstarch

- 2 cups whole milk
- 3 large egg yolks
- 1/2 cup fresh lemon juice
- 2 tbsp unsalted butter
- 1 tbsp lemon zest
Instructions
- Whisk sugar, cornstarch, and salt in a saucepan.
- Gradually whisk in milk until smooth.
- Cook over medium heat, stirring constantly until thickened.
- Beat egg yolks in a bowl, then slowly whisk in half the hot milk mixture.
- Return egg mixture to the saucepan and cook for 2 more minutes.
- Remove from heat and stir in lemon juice, butter, and zest.
- Pour into serving dishes and chill for at least 2 hours.
