- 1/2 cup unsweetened almond milk
- 1/3 cup powdered erythritol or sweetener of choice
- 1 tsp vanilla extract
- 1/4 tsp xanthan gum (optional, for creamier texture)
Instructions
- Blend strawberries until smooth. Strain if needed to remove seeds.
- In a bowl, whisk together heavy cream, almond milk, sweetener, vanilla, and xanthan gum.
- Add blended strawberries and mix well.
- Pour into an ice cream maker and churn according to manufacturer’s instructions.
- Transfer to a container and freeze for at least 4 hours before serving.
