- 6 cups water
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 bay leaf
- 2 cups vegetable broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
- Stir in black-eyed peas, water, vegetable broth, salt, pepper, smoked paprika, and bay leaf.
- Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes until peas are tender.
- Remove bay leaf before serving.

- Soak black-eyed peas overnight for faster cooking.
