- 1 lb boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 2 tbsp chipotle in adobo sauce
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 small tortillas
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 425°F.
- Toss chicken with pineapple, chipotle, olive oil, cumin, garlic powder, salt, and pepper.
- Spread mixture evenly on a sheet pan.
- Bake for 20 minutes or until chicken is cooked through.
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos with chicken, pineapple, red onion, and cilantro.
- Serve with lime wedges.
Notes
- Use fresh pineapple for best flavor.
- Adjust chipotle for more or less heat.
