A simple and delicious crockpot chicken lo mein recipe that’s perfect for dinner.
Ingredients

- 2 boneless, skinless chicken
- 8 oz lo mein noodles
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tsp ginger, grated
- 1 tbsp brown sugar
- 1/4 tsp red pepper flakes
- 2 green onions, sliced
Instructions
- Place chicken in the crockpot.
- Add garlic, soy sauce, hoisin sauce, sesame oil, ginger, brown sugar, and red pepper flakes.
- Cook on low for 4 hours.
- Shred the chicken and return to the crockpot.
- Cook noodles according to package instructions.
- Add vegetables and noodles to the crockpot. Stir well.
- Cook for an additional 15 minutes.
- Garnish with green onions before serving.
Notes
- Use any vegetables you prefer.
- Adjust spice level by adding more or less red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
