Ingredients

- 2 medium zucchinis (sliced)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tbsp soy sauce
- 1 tsp ginger (grated)
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken strips and cook until browned and no longer pink, about 5-6 minutes.
- Add garlic, ginger, and red pepper flakes, stirring for 30 seconds.
- Toss in zucchini slices and cook for 3-4 minutes until tender-crisp.
- Pour in soy sauce and black pepper, stir well to coat everything.
- Serve hot over rice or noodles.

- For extra flavor, add a splash of sesame oil.
