Ingredients

  • 1 lb dried black-eyed peas, rinsed and sorted
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 bay leaf
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add onion, garlic, and bell pepper. Sauté for 3 minutes.
  3. Stir in black-eyed peas, broth, smoked paprika, cumin, black pepper, cayenne pepper, and bay leaf.
  4. Secure the lid and set to high pressure for 20 minutes.
  5. Allow natural pressure release for 10 minutes, then quick release remaining pressure.
  6. Remove bay leaf and season with salt to taste before serving.

Notes

  • Soaking the peas overnight reduces cooking time to 10 minutes under pressure.
  • For a thicker consistency, mash some peas after cooking.
