Description

A simple and nutritious vegan recipe for black-eyed peas made in an Instant Pot.


Ingredients

  • 2 cups dried black-eyed peas
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas and drain.
  2. Turn the Instant Pot to sauté mode and heat the olive oil.
  3. Add the onion, garlic, and bell pepper. Sauté for 3 minutes.
  4. Add the smoked paprika, cumin, black pepper, and salt. Stir well.
  5. Add the black-eyed peas, vegetable broth, and bay leaf.
  6. Close the lid and set the Instant Pot to high pressure for 20 minutes.
  7. Allow natural pressure release for 10 minutes, then quick release remaining pressure.
  8. Remove the bay leaf and serve.

Notes

  • Soak the black-eyed peas overnight for faster cooking.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
