Ingredients

  • 1 cup dried black-eyed peas, rinsed and soaked overnight
  • 1 cup fresh okra, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 cups vegetable broth

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the onion and garlic, sauté until softened.
  3. Add the black-eyed peas, okra, salt, pepper, smoked paprika, and vegetable broth.
  4. Close the lid and set the Instant Pot to high pressure for 15 minutes.
  5. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Stir and serve warm.

Notes

  • Soaking the black-eyed peas overnight reduces cooking time.
  • Adjust seasoning to taste.
