Description
A quick and easy beef stroganoff made in the Instant Pot for a flavorful meal.
Ingredients

- 1 lb beef sirloin, sliced thin
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup sour cream
- 8 oz egg noodles
- Salt and pepper to taste
Instructions
- Set Instant Pot to sauté mode and heat olive oil.
- Add beef and cook until browned. Remove and set aside.
- Sauté onion, garlic, and mushrooms until softened.
- Return beef to pot. Add broth, Worcestershire sauce, and mustard.
- Seal Instant Pot and cook on high pressure for 10 minutes.
- Quick release pressure. Stir in sour cream.
- Serve over cooked egg noodles.
Notes
- Use full-fat sour cream for best texture.
- For thicker sauce, mix 1 tbsp cornstarch with 1 tbsp water and stir in.
- Store leftovers in an airtight container for up to 3 days.
