Description

A quick and easy beef stroganoff made in the Instant Pot for a flavorful meal.


Ingredients

Scale
  • 1 lb beef sirloin, sliced thin
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • 8 oz egg noodles
  • Salt and pepper to taste

Instructions

  1. Set Instant Pot to sauté mode and heat olive oil.
  2. Add beef and cook until browned. Remove and set aside.
  3. Sauté onion, garlic, and mushrooms until softened.
  4. Return beef to pot. Add broth, Worcestershire sauce, and mustard.
  5. Seal Instant Pot and cook on high pressure for 10 minutes.
  6. Quick release pressure. Stir in sour cream.
  7. Serve over cooked egg noodles.

Notes

  • Use full-fat sour cream for best texture.
  • For thicker sauce, mix 1 tbsp cornstarch with 1 tbsp water and stir in.
  • Store leftovers in an airtight container for up to 3 days.
