- 2 cups dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak them in water for 4 hours or overnight.
- Drain the soaked peas and set aside.
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, minced garlic, and diced bell pepper. Sauté until softened.
- Add the drained black-eyed peas, water, salt, black pepper, smoked paprika, and bay leaf.
- Bring to a boil, then reduce heat to low and simmer for 45-60 minutes until the peas are tender.
- Remove the bay leaf before serving.

- Soaking the peas reduces cooking time.
- Adjust seasoning to taste.
