Description

Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 4 slices bacon, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 bay leaves
  • 2 cups chicken broth

Instructions

  1. Rinse the black-eyed peas and soak them in 4 cups of water overnight.
  2. Drain the peas and set aside.
  3. In a large pot, cook the bacon until crispy. Remove and set aside.
  4. In the same pot, sauté onion, bell pepper, and garlic until softened.
  5. Add the black-eyed peas, bacon, salt, black pepper, cayenne pepper, and bay leaves.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 45 minutes or until peas are tender.
  8. Stir in the rice, cover, and cook for another 20 minutes or until rice is done.
  9. Remove bay leaves before serving.

Notes

  • For a vegetarian version, omit bacon and use vegetable broth.
  • Serve with cornbread for a complete meal.
  • Leftovers taste even better the next day.
